It only makes sense that we give you a Caprese breakfast recipe that you can make using your own fresh Mozz from one of Big Mozz’s Mozzarella Making Classes. Although we sometimes like to keep things classic, we’re putting a new spin on breakfast burritos. Caprese quesadillas stuffed with eggs, tomato, basil, and obviously, Mozz are a fun and easy addition to your weekend brunch spread. |
Ingredients:
- 2 eggs, scrambled
- Fresh Mozz
- ½ tomato, sliced
- Handful of basil
- 8-inch tortilla (or any size you prefer)
- Salt and pepper to taste
Instructions:
- Scramble the eggs making sure not to overcook them. Add salt and pepper to taste
- Spread the eggs on ½ a tortilla
- Top with basil, tomato, and Mozz
- Fold over the other ½ of the tortilla and toast in a greased pan until golden brown on both sides.
- Slice and serve
