Caprese Breakfast Quesadilla

Caprese Breakfast Quesadilla from Big Mozz
It only makes sense that we give you a Caprese breakfast recipe that you can make using your own fresh Mozz from one of Big Mozz’s Mozzarella Making Classes. Although we sometimes like to keep things classic, we’re putting a new spin on breakfast burritos. Caprese quesadillas stuffed with eggs, tomato, basil, and obviously, Mozz are a fun and easy addition to your weekend brunch spread.


  • 2 eggs, scrambled
  • Fresh Mozz
  • ½ tomato, sliced
  • Handful of basil
  • 8-inch tortilla (or any size you prefer)
  • Salt and pepper to taste


  1. Scramble the eggs making sure not to overcook them. Add salt and pepper to taste
  2. Spread the eggs on ½ a tortilla
  3. Top with basil, tomato, and Mozz
  4. Fold over the other ½ of the tortilla and toast in a greased pan until golden brown on both sides.
  5. Slice and serve
