Eggs are a must at our brunch table, but we like to make plain, scrambled eggs a little less boring. The addition of onions, zucchini, and tomatoes gives this dish a fresh flavor for an easy morning pick-me-up. And of course, home-made Fresh Mozz gives these eggs a little something extra special.
2 tablespoons olive oil
1 ½ cups red onion, sliced
1 ½ cups zucchini, chopped
½ teaspoon salt and pepper (or to taste)
2 tablespoons tomatoes, chopped
1. Position rack in upper third of oven; preheat broiler.
2. Heat oil in a large broiler-safe skillet over medium-high heat. Add onion and zucchini and cook, stirring frequently until soft, about 5 minutes.
3. In a bowl, whisk eggs, salt and pepper together. Pour over the vegetables in the pan. Cook about 2 minutes until nearly set. Top with Fresh Mozzarella and tomatoes and place under the broiler until the eggs are slightly browned, about 2 minutes. Let stand for 3 minutes. 4. Slice and serve.
