They say breakfast is the most important meal of the day. If you ask us, breakfast is not complete without lots, and we mean lots, of melty Mozz. These crispy, cheesy potatoes are the perfect brunch side dish that will leave everyone at the table wanting more.
The key to making these potatoes Big Mozz style is to start with the best fresh mozzarella ever, made in one of our Mozzarella Making Classes.
- 6 potatoes, cubed
- 1 large onion, chopped
- ¼ tsp garlic powder
- ¼ tsp parsley
- 2-3 tbsp olive oil
- Salt and pepper to taste
- Fresh Mozz
- Preheat the oven to 400ºF.
- Combine all the ingredients, except for the cheese, in a large bowl and mix well to coat all the potatoes and onions in oil and seasoning.
- Bake, in an oven-proof dish, for 30-40 minutes or until crispy and golden.
- Top with the fresh Mozz and bake until just melted then scatter over the chives and serve.
